
Drizzle this creamy, low-fat custard over your favourite desserts for a guilt-free treat.
The calories in puddings can really add up if you dowse your bowl in thick, warm custard, but at the same time - what's the point of warm winter puddings if they don't have some cream or custard over the top? This homemade version is the perfect solution. You might not have thought of making your own custard before, but it only requires five ingredients and it's simple to do. Plus making it yourself means you can control the calories. A portion of this golden topping is only 75 calories and it only takes 10 minutes to knock it together. Serve with a classic apple crumble or stewed apples.
Ingredients
- 300ml skimmed milk
- 2tsp cornflour
- 4 tbsp granular sweetener
- 2 medium egg yolks
- ½ tsp vanilla extract

Method
- Put the milk into a pan and slowly bring to simmer, remove from the heat.
- Put the cornflour, sweetener, egg yolks and vanilla extract into a bowl and whisk together until combined.
- Gradually whisk in the warm milk, adding a little at a time in a steady stream.
- Rinse out the pan, then strain the mixture back into it to ensure there are no lumps. Heat gently, whisking all the time until the custard thickens, it should just coat the back of the spoon. Serve immediately.
Top tip for making low-fat custard:
We’ve used vanilla extract here for ease and speed but you could scrape the seeds from a vanilla pod for a real extravagant punch of flavour.
